Iceberg Lettuce with Creamy Mustard Vinaigrette

Funky bleu cheese, spicy dijon mustard, and crunchy toasted nuts. Perfect for picnics or summer afternoons on the porch.

Ingredients

For the Salad

  • 1 small head Iceberg Lettuce chopped
  • 1/4 cup Bleu Cheese crumbled
  • 1/4 cup Pecans toasted and chopped
  • 1 bunch Parsley chopped
  • Salt and Pepper to taste

For the Vinaigrette

  • 1 clove garlic
  • 1/2 tsp flaky sea salt
  • 1 tsp red wine vinegar
  • 1 tsp olive oil
  • 1 tsp creme fraiche
  • 1 tsp dijon mustard

Instructions
 

  • Using a mortar and pestle, grind the garlic and sea salt into a thick paste
  • Add the red wine vinegar and olive oil and whisk to combine
  • Add the creme fraiche and mustard and whisk until the mixture becomes a thick, creamy dressing
  • In a big salad bowl, combine the lettuce, crumbled bleu cheese, parsley, and toasted pecans
  • Just before serving, toss with vinaigrette
  • Grind fresh pepper on top
