Raw Cauliflower Salad with Spiced Yogurt Sauce

Inspired by Bar Tartine

Serves 4

This raw cauliflower salad is so delicious and could easily replace potato salad at your next barbecue. The creamy and crunchy texture makes it surprisingly satisfying, while the watermelon radishes add a beautiful accent color that you and your guests will love.


For the Yogurt Sauce

1 cup greek yogurt
2 tbsp garlic
5 tbsp olive oil
2 tbsp lemon juice
1 tbsp agave
1 1/2 tsp salt
black pepper (freshly ground, to taste)

For the Salad

1 cauliflower head (cut into tiny, bite-size florets)
2 Persian cucumbers (quartered length wise and sliced into half moons)
1 cup portabella mushroom caps (diced)
1 bunch green onions (white and light green parts only, thinly sliced)
1 serrano pepper (stem and seeds removed, diced)
1 watermelon radish (thinly sliced and quartered)
1/4 cup sunflower seeds (lightly toasted)
1/2 cup cherry tomatoes (halved vertically)
1 bunch parsley (stems removed and coarsely chopped)
12 fresh mint leaves
1/2 tsp roasted chili powder
sweet paprika (to serve)


Add all the ingredients for the yogurt sauce to a medium salad bowl and whisk to combine.

Add all remaining ingredients to the salad bowl and toss to coat everything in the yogurt sauce. Taste and adjust with salt, lemon juice, and chili powder to reach desired seasoning. Let stand at room temperature for 30 minutes before serving, allowing the cauliflower to soften.

Transfer to a serving platter and sprinkle with sweet paprika.
