Roasted Chili Powder

Makes 1 cup
In comparison to store-bought red chili flakes, making your own chili powder is a serious upgrade in both spice and flavor.
1 cup dried chilies de arbol
Remove all the stems from the chilies and discard.
Heat a wok over medium low heat and add the chilies. Toast slowly for about 10 minutes, until chilies are a deep red color and begin to glisten.
Add to a blender and pulse until the chilies have reached a similar consistency to store bought chili flakes. Transfer to an airtight container. Take care not to inhale the air when removing the lid of the blender.
